3 cups chicken; cooked and diced
1/2 cup pecans; toasted
1 cup celery; chopped
1/2 cup coconut
1/2 cup grapes, seedless; halved
1/4 cup sour cream
1 teaspoon mustard
1/2 teaspoon salt
1/2 cup mayonnaise
juice of half a lemon
Combine chicken, pecans, celery, coconut and grapes. Mix together the sour cream, mustard, salt, mayonnaise, and lemon juice to make dressing. Serve on lettuce or halved avacado. Surround with pineapple or other fruit. Garnish with olives or cherries.
