Ingredients
3/4 lb. mostaccioli or small tube pasta
3/4 lb. packaged cooked chicken strips
2 tomatoesraw, peeled and chopped
1 zucchiniraw, trimmed and thinly sliced
3 oz. black olives, pitted and sliced
1/3 cup scallions, chopped
1/4 cup plus 2 Tbsps. tarragon vinegar
1/4 cup olive oil
2 tsps. basil, or 3 Tbs. fresh, minced
1-1/2 tsps. salt (optional)
1/2 tsp. dry mustard
1/4 tsp. pepper
1 clove garlic, minced
Instructions
Cook pasta in boiling salted water about 8-10 minutes, or until al dente. Drain and transfer to a salad bowl. Add next 5 ingredients to pasta. Combine remaining ingredients in a jar with a tight-fitting lid. Shake vigorously. Pour dressing over salad and toss. Let sit 30 minutes for flavors to meld.
