Mediterranean Chicken and Penne
Here's a simple, fresh-tasting chicken and pasta dish that the whole family will love. If you have fresh oregano on hand, use it instead of the dried version and double the quantity to two teaspoons.

Ingredients:
* Nonstick cooking spray
* 2 teaspoons olive oil
* 1/2 onion, peeled and diced fine
* 2 cloves garlic, peeled and minced
* 1 pound skinless, boneless chicken breast
* 8 ounces penne pasta
* 8 pitted black olives, sliced
* 1/4 cup chopped fresh basil
* 1 teaspoon oregano
* 1/4 cup grated Parmesan cheese
Directions:
Liberally spray a large nonstick skillet with cooking spray. Add the oil and heat over medium heat. Add the onion and garlic and saute until the onions are soft, about 3 to 4 minutes.
Fill a large saucepan with 2 inches of water. Place the chicken breast in a steamer basket (or stainless colander) and place in the saucepan. Bring the water to a boil and steam the chicken for 7 minutes. Remove the pot from the heat and let sit for 2 to 3 minutes, until the chicken is fully cooked and no longer pink inside. Remove the chicken from the basket, cover and let cool. When cooled, cut into 1-inch chunks.
Meanwhile, cook the penne according to the package directions. Drain and keep warm.
Add the chicken chunks, olives, basil and oregano to the skillet with the onion. Turn to medium heat, cover and simmer for 5 minutes.
In a large mixing bowl, toss the chicken with the hot penne; sprinkle the top with the cheese. Serve immediately.
