3tbsp veg oil
3 medium onions, finely chopped
4 chicken portions
1kg tomatoes
1/4tsp ground ginger
2tsp ground cinnamon
Salt and pepper
2tbsp clear honey
2tbsp sesame seeds, toasted
Serve with cooked couscous
1. Heat oil in large pan. Add onions and chicken and fry until lightly browned.
2. Add tomatoes, ginger and cinnamon, season with salt and pepper. Cover and cook gently, turning the chicken occasionally. Cook until chicken is tender.
3. Remove the chicken and reduce sauce to a thick sizzling cream. Stir as it begins to caramelize and be careful that it doesn’t stick or burn
4. Add the honey, return the chicken to the sauce and heat through.
5. Serve sprinkled with sesame seeds and couscous.
