2 1/2 lbs chicken tenders or chicken breast cut in strips - no skin
salt
4 tablespoons butter or margarine
1/4 to 1/2 cup butter or margarine, melted
1 cup all-purpose flour
2 teaspoons salt
1/4 teaspoon pepper
2 teaspoons paprika
2 eggs, slightly beaten
3 tablespoons milk
2/3 cups grated Parmesan cheese
2/3 cups grated Romano cheese
2/3 cups dry bread crumbs
Heat oven to 400. Melt 2 tablespoons butter in 9 x 13. Lightly salt chicken. Coat chicken with mixture in dish 1, dip chicken into dish 2, roll chicken in dish 3. Roll up strips and secure with a toothpick. Place chicken in pan. Drizzle with melted
butter. Bake 45 minutes or until done. May serve with several sauces - salsa, sweet and sour, BBQ, use your imagination.
Note: if in a hury can use whole pieces of chicken, place in pan bone side down.
