Ingredients:
* 2 T olive oil
* 1 T vegetable oil
* 4 T butter
* 1 T finely chopped garlic
* 1 T dried mushrooms, soaked in 4 T water, drained and chopped finely
* 2 green peppers, blanched, seeded and finely chopped
* salt
* pepper
* dry mustard to taste
* a little cayenne pepper
* paprika
* 1 1/2 lbs. shelled shrimp
* 2 T chopped chives
* 2 T finely chopped red onion
saffron rice
Method
Heat oil and 2 T butter. Saute garlic and mushrooms. Add green pepper. Season with salt, pepper, mustard, and cayenne. Sprinkle with paprika and add remaining 2 T butter. Add shrimp and shake over moderate heat 8 minutes, covering them well with sauteed mixture. Add chives and onion. Serve on saffron rice.
