Ingredients
* 12 ounces turkey breast tenderloins, cut into 1-inch pieces
* 2 cloves garlic, minced
* 2 teaspoons olive oil
* 1 cup salsa
* 1/4 cup raisins
* 1 tablespoon honey
* 3/4 teaspoon ground cumin
* 1/2 teaspoon ground cinnamon
* 1 cup water
* 1/4 teaspoon salt
* 3/4 cup quick-cooking couscous
* 1/4 cup slivered almonds, toasted
Directions
1. In a large skillet, cook and stir turkey and garlic in hot oil over medium-high heat about 5 minutes or until turkey is no longer pink. Stir in salsa, raisins, honey, cumin, and cinnamon. Bring to boiling; reduce heat. Simmer, covered, for 5 minutes.
2. Meanwhile, in a medium saucepan, bring water and salt to boiling. Stir in couscous. Cover; remove from heat. Let stand for 5 minutes. Fluff with a fork before serving. Serve turkey mixture over couscous and top with almonds. Makes 4 servings.
