Veal Scallops With Bacon A La Cubana Recipe
Disclaimer from Walter, recipe submitter: Steak & Bacon is an old dish. However, I prepare it using this personal recipe. I did not read or take the recipe from anywhere else. Being Cuban born, I named it "A la Cubana". Please, you can use any other name you want. Enjoy it! Ingredients: (For 2 persons —big eaters, please, multiply by 2): 8 to 12 oz of veal scallops 6 strips of bacon (4 oz) 1 or 2 limes 1 large onion (or 2 medium ones) 4~6 garlic cloves 1 large green pepper (2 medium ones) 1 teaspoon of olive oil Some pickled sweet red pepper (for final dressing) Salt (your taste). Preparation: The day before frying, marinate the (veal) scallops as follows: Squeeze the lime, spreading its juice on both sides of the meat. Crush the garlic cloves together with salt and apply to the scallops using your fingers. Cut the onion and pepper in small dice. Mix them. 6 whole boned, chicken breasts (skin on) 2 tablespoons green or yellow onion, finely chopped 3 cloves garlic, minced garlic powder, salt and pepper (for sprinkling) 1/2 teaspoon paprika 1/4 cup grated Parmesan cheese 1 teaspoon fresh Rosemary, minced 2 tablespoons fresh Parsley, minced 1/4 cup each of butter and olive oil 1 1/2 cups bread crumbs 1/2 lb thinly sliced ham or prosciutto, finely chopped 12 wooden toothpicks (soaked in water for 5 minutes) Preheat grill so that coals are white hot in time for grilling. Melt butter in microwave, stir in oil. To this warm mixture, add Parsley, Rosemary, minced garlic, chopped onion and paprika (a pinch of rubbed sage may optionally be added if you have it on hand, but be careful not to overdo). Allow the herbs to infuse for 10 minutes. Remove 3-4 tablespoons to a separate small bowl and use this to brush both sides of the chicken. Place chicken breasts, skin side down, on a layer of wax paper or plastic wrap. Pound lightly

The center of powerful Hurricane Dean is now passing just south of the western part of Jamaica with 145 mph winds; a healthy category 4 on the Saffir-Simpson scale. Country Fried Chicken
Pieces of frying chicken, moistened 1/2 c. flour 1 tsp. salt 1/2 tsp. pepper Cooking oil or shortening Shake the pieces in a bag with flour seasoned with the salt and pepper. Fry in deep skillet with hot oil or shortening, about 1 inch deep. The skillet should be medium hot. Turn the chicken over when it is golden brown. Reduce the heat and cook until well done and brown on both sides, about 45 minutes.

Easy Chicken And Steak Fries
1 to 1 1/2 chicken cutlets for each person being served 1 lg. bag frozen steak fries Salt and pepper Sprinkle garlic powder 1/2 lb. butter Take large roasting pan and spread out frozen steak fry potatoes to cover bottom of pan. Take chicken cutlets and spread over potatoes. Pour 1/2 pound melted butter over top of chicken, coating slightly. Sprinkle with salt, pepper and garlic powder. Bake at 400 degrees until tender, about 20 to 25 minutes.

Diet Pepsi Chicken
Strips of chicken breasts in a baking dish are baked with a mixture of condensed soups & diet cola. The chicken and sauce may be served over rice. Ingredients: 3 lbs boneless skinless chicken breast halves 1 can cream of onion soup 1 can cream of mushroom soup 1 can of Diet Pepsi cola (1 1/2 cups) 1 teaspoon dried parsley Pepper to taste Cooked rice, if desired Directions: Slice chicken breasts into wide strips; lay in a baking dish. In bowl combine both soups and Diet Pepsi; stir together, pour over chicken and bake at 350 degrees about 30 minutes or until chicken is done. Serve over rice, using the sauce as gravy. Fabulous Enchilladas
These quick and easy enchilladas are topped with a creamy sauce and lots of shredded cheese. Ingredients: 2 lbs boneless and skinless chicken breast, cooked and cubed 1/2 cup salsa 1/2 cup chopped cilantro 1/8 tsp cumin seed, ground 2 cans cream of chicken soup, low sodium or fat free if desired 1 cup milk 8 ounces sour cream 1 small can of green chilies 10-12 flour or corn tortillas 1/2 lb grated cheddar cheese 1/2 lb grated jack cheese Directions: Mix soup, milk, sour cream, and chilies together to make sauce. Mix chicken, cilantro, salsa and cumin together. Add a little sauce just to coat the meat mixture. Spread a little sauce in the bottom of a 9 x 13 inch casserole dish. Spread meat mixture with cheese into tortillas. Roll tortillas and place seam down in casserole dish. When dish is filled, top with remaining sauce and cheese. Cover dish with aluminum foil so cheese doesn't burn. Bake at 325 degrees for 30 minutes. Serve with rice and salsa verde. Number of Serv

Easiest Ever Pulled Chicken
This tangy sauced pulled chicken is so easy to make when it cooks in your crock-pot all day. Ingredients: 4 boneless chicken breasts 2 red peppers, chopped 1 tbsp brown sugar 1/4 cup ketchup 1 tsp dry mustard 1 tbsp Worcestershire sauce 2 tbsp chili powder 2 28 oz cans tomato puree 1 tbsp white vinegar Salt and pepper to taste Directions: Brown chicken breasts in hot oil and place in crock-pot. Add all other ingredients to crock-pot. Cook on high for one hour then reduce to low heat for 4-5 hours. Cool chicken then pull apart with two forks. I can officially say that this morning I had one of the proudest moments of my life. It may seem like a small thing to many people, but for my brother and my family it was a huge deal. I came to my parents house last night because my mom needed to be at work for their first day of school and she needed someone to get Mike up, dressed, fed, and ready for when the driving instructor came. I walked outside to say a few words to the instructor and watched as they got the adapted van ready. They took out the drivers seat that the instructor used to get here and Mike rolled his wheenchair right on in. I watched as they tested the computer system by moving the joystick and watching the steering wheel turn in response. I have never seen anything as cool as that van. Tortilla De Patatas
The tortilla is a way of life in Spain (and worth it!) For 4 to 6 persons: 1 cup olive oil, four large potatos (peel and cut in circles about 2mm thick; salt to taste; one large onion, thinly sliced; four large eggs. Some people add thin slices of red pepper together with the onion. Heat the oil in a 9-inch skillet, add potatos, one slice at a time so that they don't stick. Alternate layers of potato and onion. COOK slowly, medium flame. DO NOT FRY!! Turn ocasionally until potatoes are tender, but NOT brown. They must be loose, not "in a cake". Beat eggs in a large bowl with a fork. Salt to taste. Drain potatoes. Add potatoes to beaten eggs, pressing them so that eggs cover them completely. Let sit for 15 minutes. Heat 2 tbsps of the oil in large skillet. Add potates-egg mixture, spreading quickly.Lower the heat to medium-high.Shake pan to prevet sticking (crucial step!!) Roast Duckling *romantic Dinner For 2*
INGREDIENTS: * 1 frozen duckling, thawed * 2 oranges, peeled * salt and pepper * 3 tablespoons fresh orange juice * 3 tablespoons champagne * 3 egg yolks * 2 cups heavy cream * salt and pepper * orange segments for garnish PREPARATION: Wash duck and pat dry inside and out. Stuff with peeled oranges. Prick skin all over with fork. Season lightly with salt and pepper. Place on rack in roasting pan. Roast in a preheated 350° oven for 30 to 35 minutes per pound.Remove and cut into 4 sections; discard orange pulp. Arrange on a hot serving platter and keep warm while preparing sauce. Place cream and egg yolks in a shallow pan; heat gently. Add orange juice and champagne a little at a time. Add a little salt to taste. Allow sauce to come to a simmer; continue to heat for 15 seconds. Do not boil. Pour sauce over duck and garnish with fresh orange sections. Serves 2.

NGREDIENTS: * 8 pork chops * 2 tablespoons vegetable oil or shortening * 1/2 teaspoon salt * 1/2 teaspoon sage * 4 apples, cored and sliced, (tart) * 1/4 cup brown sugar * 2 tablespoons flour * 1 cup hot water * 1 tablespoon vinegar * 1/2 cup raisins PREPARATION: Brown pork chops in hot oil; sprinkle with salt and sage. Place in baking dish and top with apple rings. Sprinkle with brown sugar. Add flour to fat in skillet and blend well. Add water and vinegar.Cook until thick. Add raisins and pour over chops. Bake, uncovered, in a 350 degree oven for 1 hour. Serves 8.

INGREDIENTS: * 4 to 6 boneless pork chops, about 3/4 to 1 inch thick * 1 can cream of celery soup * 2 teaspoons Wyler's Shakers™ Beef & French Onion Flavor * 1 tablespoon dried minced onion * 2 teaspoons dried parsley, optional PREPARATION: Place all ingredients in the slow cooker/Crock Pot. I Never Did Make Dumplings
Most definitely not chicken soup for the soul... Lol you would think I would give up on cooking chicken after reading the other blogs.. but nope not this lil girlie... I guess I'm kinda tired of being single. I don't understand the male mind. I just don't understand what I could be doing wrong. I mean I'm nice, caring, sweet, funny. I know I'm kinda over the ideal weight but I've been working on it, I have a pretty face (or so I've been told) and big boobs. I don't shy away from sex. I don't play games. I Have My 1st Half Marathon...

Jamaican Chicken Salad And Jamiacan Jerk Seasoning
Makes 4 servings. 1/2 cup bottled fat-free honey-Dijon salad dressing 1 teaspoon finely shredded lime peel 4 skinless, boneless chicken breast halves 2 to 3 teaspoons Jamaican Jerk Seasoning (recipe follows) 2 teaspoons cooking oil 1 (16-ounce) package torn mixed salad greens 16 refrigerated mango slices in light syrup, drained For dressing, stir together salad dressing and lime peel. Rinse chicken; pat dry. Sprinkle chicken with Jamaican Jerk Seasoning. In skillet, cook chicken in hot oil over medium-hot heat about 6 minutes per side, or until golden brown. Thinly bias-slice each chicken breast. Divide salad greens among 4 dinner plates. Arrange warm chicken and mangoes on top of greens; drizzle with dressing. What Is Happiness?

Ingredients: 1/2 c dry white wine 1 lb scallops, fresh or thawed 6-8 sliced mushrooms, plus butter to cook in 4 T butter 3 T flour 2 egg yolks 1 c cream Salt and pepper, to taste Lemon juice Stock: 1 small onion 1 stalk celery 1 bay leaf 1 slice lemon 2 c water Pinch of salt and pepper Directions: Put stock ingredients in 2 qt pan. Bring to boil and simmer 10 minutes. Add wine and scallops, simmer 5-10 minutes more. They are done when they're creamy colored all the way through. Don't overcook! Drain and reserve liquid. Return liquid to pot and cook down to 1 cup. Meanwhile, saute mushrooms and set aside. Make a cream sauce: melt butter and flour, cook until bubbly; gradually add reduced scallop liquid (1 cup); stir until smooth and bubbly. Beat egg yolks and cream. Remove sauce from stove, beat in cream-egg mixture (you want to be stirring, preferably with a whisk, the whole time you add in the milk and eggs to make sure the eggs don't cook). Add mushrooms

Marmalade Glazed Chicken With Biscuits
A baked chicken recipe with marmalade and orange biscuits. INGREDIENTS: * 1/2 cup sifted flour * 1 teaspoon salt * 1/4 teaspoon pepper * 1 frying chicken, about 3 to 4 pounds, cut up * 1/2 cup shortening * 2/3 cup marmalade, divided * 6 biscuits * 2 cups biscuit mix * 2 teaspoons grated orange rind * 2/3 cup orange juice PREPARATION: Combine flour, salt and pepper; dredge chicken parts in flour mixture. Melt shortening in a heavy skillet; brown chicken pieces; cover and cook over low heat until chicken is tender. Place chicken in a greased 11 x 9-inch baking dish.Spread marmalade over chicken, reserving 2 tablespoons for biscuits. Combine biscuit mix, orange rind and juice. Roll out; cut into 1 1/2- inch rounds (about 12 biscuits). Place around edge of baking dish. Make a dent in the top of each biscuit and fill with 1/2 teaspoon of marmalade. Ingredients FILLING: 1/4 C. (4 tbsp.) butter, melted 4 eggs 3/4 C. sugar 1 C. light corn syrup 1/2 tsp. cider vinegar 2 tsp. vanilla 1/2 tsp. salt 2 C. pecan pieces CRUST: 10 sheets phyllo dough 4 tbsp. melted butter 1 tbsp. sugar TOPPING: 3 oz. cream cheese, softened 1 tsp. vanilla 1 tbsp. sugar 2 tbsp. ground pecans 10 pecan halves Directions For the filling: Combine melted butter, eggs, sugar, corn syrup, vinegar, vanilla and salt; beat well. French Beef Stew
Quick and easy, this is a very hearty stew, in truth, a meal in itself. Serve with warm crusty French Bread, if desired. Ingredients 1 1/2 lbs. cubed beef stew meat 1/4 C. all-purpose flour 2 Tbs. vegetable oil 2 (14.5 oz.) cans Italian-style diced tomatoes 1 (14 oz.) can beef broth 4 carrots, chopped 2 potatoes, peeled and chopped 3/4 tsp. dried thyme 2 Tbs. Dijon-style prepared mustard salt and pepper to taste Directions Combine meat and flour in a large plastic food storage bag and toss to coat evenly. In a 6 quart saucepan, brown meat in hot vegetable oil. Season with salt and pepper, if desired. Add diced tomatoes, beef broth, carrots, potatoes and thyme. Bring to boil; reduce heat to medium-low, cover; and simmer for 1 hour or until beef is tender. Blend in mustard and serve. Yield: 8 Servings

I know I come off as a bitch, as a hard ass, as someone who can dish shit out and take it. The honest to god’s truth is that I’m a pretty tender little girl. Hamburger Pie
This is always a favorite at my dinner table. This is especially good for children. Ingredients 1 lb. ground beef 1/2 medium yellow onion 1 10-oz. can condensed tomato soup 1 15-oz. can cut green beans 4-6 servings of mashed potatoes 1 C. shredded cheese (Colby, cheddar, American, etc.) Directions Cook ground beef and onion until beef is browned and onion is tender. Drain off fat. Combine soup and green beans with cooked meat. Heat on medium/low for 10 minutes. Pour beef mixture into very large pie pan. Top with mashed potatoes. Sprinkle with shredded cheese. Bake for 10 minutes at 350 degrees until cheese is melted. Makes 4-6 servings.

Blood Test Results
I got the blood test results back yesterday. My kidney function is fine, my cholestrol is fine, my blood sugar was 94 (normal), my thyroid was fine, I passed the drug test, my triglicerides were 87 (normal), my white and red blood cell count was off quite abit meaning I have an infection somewhere in my body. There were some other things that were fine but barely so they are going to keep an eye on those too. The other thing was to test the oxygen level in my body which is okay but barely. I'm still waiting to hear about weither or not I'm going to get the medical card. I still can't get anyone to help me with my health problem. The nurse I see to get my medications said they might have to send me to the emergancy room just so someone will realize theres something seriously wrong. A versatile starter for Game Day, when friends drop by or, when time is short, this can be a great dinner for the family. Add a tossed salad and some garlic toast and you have a meal. Ingredients 3 lb. lean ground beef 1 C. Italian seasoned bread crumbs 2 qts. broth or boullion (canned, fresh or cubes) Directions Place broth in sauce pan and bring to boil over high heat. Meanwhile, mix beef and crumbs together thoroughly and shape into walnut size balls. After you have all the beef shaped begin putting them into the boiling broth a few at a time. Simmer the balls for 3-4 minutes, then remove from the broth with a sieved spoon. Place cooked balls in collander to drain thoroughly. Repeat until all of the meatballs are cooked. Dispose of the broth or you can use it to make soup at another time. At this point you decide how many meatballs you need for a meal. Divide into meal size portions and freeze in sealable bags. Beef With Brandy And Mustard
serves 4 1 tbsp olive oil 1 1/4 lb bottom round steak trimmed of fat and membrane 1/2 cup brandy 2 cup beef stock 2 tbsp coarse grained mustard 2 tbsp Dijon mustard 4 Shallots peeled, thinly sliced 4 sun dried tomatoes (not oil packed) cut into slivers 3 lg garlic cloves peeled thinly sliced 6 juniper berries 1 bay leaf Black pepper to taste Preheat oven to 325 F. In a Dutch oven or deep skillet, heat oil over medium heat. Add meat and brown on all sides. Transfer to a plate lined with paper towels and drain off all the pat in the pan. Return the pan to the heat and immediately add brandy, stirring to scrape up any browned bits in the bottom. Cook until the brandy is reduced to a syrupy glaze. Stir in stock, mustards, shallots, sun dried tomatoes, garlic, juniper berries, and bay leaf and bring to a boil. Return the meat to the pan, cover tightly and place in the oven.
